Rice timballo with peas, smoked ham and Mozzarella

Timballo is my comfort food: it is easy, tasty, colorful, not expensive and if you have any leftovers (good luck with that), timballo Is delicious even the day after you make it!


  • Rice, 200g
  • Smoked ham, 5 slices
  • Frozen Peas, 150g
  • Mozzarella, 200g
  • Parmesan cheese 2 tablespoons
  • Spring onions, 2
  • Olive oil
  • Salt
  • Pepper


  1. Boil the rice
  2. Peel and cut the onions
  3. Warm some olive oil in a pan and add the onion, let them cook for 3-4 minutes
  4. Cut the ham in squares and add them in the pan, let them cook until crispy
  5. Boil the peas
  6. Cut the mozzarella in squares
  7. Mix the rice, onion, ham, peas, parmesan and great part of the mozzarella (leave some to put it on top of the timballo)
  8. Add salt and pepper as you like
  9. Put some oil in a tray
  10. Add the rice mixture in the tray
  11. Add some mozzarella on top
  12. Let everything cook in a fan assisted oven, 180° for 15-20 minutes, until the Mozzarella on top becomes golden


Rocket and walnut pesto

I love rocket, I use it almost every day as a side or to decorate my main dishes: it is colorful, pretty to see, and it has a lovely sharp taste. I think that combined with gnocchi and their soft, delicate texture, we have a fantastic match, that guarantees little effort with excellent results 🙂


  • Rocket, 70 g
  • Basil, 10 leaves
  • Garlic, 1 clove
  • Parmesan grated, 100 g
  • Olive oil, 100 ml
  • Walnuts, 60 g plus some to decorate
  • Gnocchi
  • Salt
  • Pepper


  1. Wash the rocket
  2. Peel the garlic
  3. Put the rocket, oil, parmesan, garlic and walnuts in a blender
  4. Add salt and pepper
  5. Put the cream in the fridge until the gnocchi are ready
  6. Cook the gnocchi and drain them
  7. Mix the gnocchi with the cream
  8. Add some walnuts to decorate
