RagΓΉ Is not just a sauce, it is the perfect representation of the love and care that Italians have for food: it takes several hours to make it and it needs stirring regularly, but the result will pay everything off, I promise!

Ingredients:

  • Beef ribs, 700g
  • Pork ribs, 350g
  • Pork sausage, 350g
  • White onion, 1
  • Olive oil
  • Salt
  • Pepper
  • Red wine half a glass
  • Tomato sauce 700g

Recipe:

  1. Peel and cut the onion
  2. Warm some oil in a pan and add the onion
  3. When the onion is clear turn the heat off
  4. Cut the beef and remove the fatty bits
  5. Cut the beef, the pork and the sausage in pieces and add them to the pan
  6. Turn the heat on and let the meat cook for 10 minutes at low temperature
  7. Add the wine and let it evaporate
  8. Add the tomato sauce
  9. Add 2 glasses of water
  10. Add salt and pepper
  11. Let everything cook for 5 hours at very low temperature
  12. If you want (this is not part of the traditional recipe but I love it) after 4 hours add some frozen peas, they give some colour and their sweetness matches well with these flavours

Pasta alla norma

Pasta alla Norma is a traditional recipe from Sicily, it takes its name from the Bellini masterpiece Norma πŸ™‚ I am not surprised that such a lovely recipe has been compared to the perfection of this opera!

Ingredients:

  • Pasta (rigatoni, sedani, mezze maniche, penne) 300g
  • Aubergine, 500g
  • Olive oil
  • Salt
  • Pepper
  • Garlic, 1 clove
  • Salted ricotta to grate
  • Basil leaves
  • Vine tomatoes 800g

Recipe:

  1. Wash and chop the tomatoes
  2. Peel and cut the garlic
  3. Warm some oil in a pan and add the garlic
  4. When the garlic starts to bubble, add the tomatoes and let everything cook at very very low temperature for 30 minutes
  5. In the meantime, cut the aubergines in slices, put them in a colander and layer them covered in sea salt
  6. Put a pan with water on top of the aubergines so they release their bitter juice and leave them in the colander for at least half an hour
  7. When the tomatoes are cooked, blend everything together
  8. Put the sauce again in a pan and let it cook for 15 minutes until the sauce is more thick
  9. Add salt and pepper as you like
  10. Rinse the aubergines and dry them well with a towel
  11. Put some oil in a pan and fry the aubergines until golden
  12. Once they are fried, put them in a dish covered with kitchen towel to absorb the oil
  13. Cook the pasta
  14. When the pasta is done, mix it with the tomato sauce and add the aubergines slices on top of it
  15. Grate some salted ricotta and put it on top of the pasta
  16. Add the basil leaves

Pasta alla norma

This is one of my favourite recipes, I love aubergines and they are meant to be with salted ricotta, they are the perfect combination!

Ingredients:

  • Chopped tomatoes, one tin
  • Garlic, one clove
  • Olive oil
  • Rapeseed oil
  • Aubergine, 250 g
  • Salt crystals
  • Pasta rigatoni, 320g

Recipe:

  1. Peel and cut the garlic finely
  2. Warm some oil in a pan and add the garlic
  3. Add the tomatoes and let everything cook for 20 minutes
  4. In the meantime, cut the aubergines in slices of about 3 mm
  5. Leave the slices in a colander, add some salt crystals on every layer and on the last layer add also a pan with water, so that the aubergines lose their bitter water
  6. Leave the aubergines for 40-60 minutes
  7. After this time, add some rapeseed oil in a pan and warm it
  8. Fry the aubergines until they have a lovely golden colour
  9. Cook the pasta
  10. When the pasta is cooked, add the tomatoes and the aubergines
  11. Grate some salted ricotta on top of the pasta

Penne all’arrabbiata

This recipe is very easy, quick and tasty!

I love the colours, the spiciness and the amazing flavours you can get from simple ingredients πŸ™‚

Ingredients:

  • Penne
  • Chopped tomatoes, 1 tin
  • Garlic clove, 1
  • Hot Chillies, 2
  • Sweet chillies, 2
  • Parsley
  • Olive oil
  • Salt
  • Pepper
  • Optional to decorate:dry chilli flakes

Recipe:

  1. Cut the garlic
  2. Put the oil in a pan, warm it and add the garlic
  3. When the garlic starts getting golden turn the heat off
  4. Cut the chillies and add them to then pan
  5. Cook them for 2-3 minutes
  6. Add the tomatoes
  7. Add the salt and pepper
  8. Let the sauce to cook for 10-13 minutes
  9. Cook the pasta
  10. Once the pasta is cooked, stir it with the sauce
  11. Put the pasta in a plate and add the parsley
  12. Optional add the chili flakes to decorate

Aubergines parmigiana

Parmigiana is one of my favourite things. There are hundreds of versions of this recipe, and you can add any filling you like to make it even more tasty and scrumptious!

Ingredients:

  • Aubergines, 500 g
  • Mozzarella slices, one pack
  • Tomato sauce, 500 g
  • Spring onions, 3
  • Rapeseed oil
  • Grated parmesan cheese
  • Salt
  • Pepper
  • Sugar
  • Salt crystals

Recipe:

  1. Wash the aubergines and cut the green bit on top
  2. Cut the aubergines in slices of 4-5 mm
  3. Put the slices in a colander, put the salt on top of the slices so that they don’t become brown
  4. Add several layers of the slices with salt on top
  5. Put a pan with water on top of your colander, so that the aubergines release their water, too butter for the frying process
  6. Leave the aubergines for 40-60 minutes
  7. In the meantime, add some oil in a pan
  8. Wash and cut finely the onions
  9. Add the onions in the pan
  10. When they are clean, add the tomato sauce. Add salt, pepper and sugar until you get the taste you like, and let the tomato sauce cook for 35-45 minutes at low temperature
  11. Take some aubergines (not all of them), rinse them and dry them using a towel – do this quite well otherwise the wet aubergine will “explode” in the pan when you fry it
  12. Put the oil in a pan and heat it
  13. When the oil is hot, add the aubergines you dried with the towel
  14. In the meantime the dry aubergines are cooking, dry some more for the next batch to fry
  15. When the aubergines have a lovely golden colour on both sides, take them out the pan and put them in a tray you covered with kitchen towel
  16. Keep drying and frying the aubergines
  17. Put some tomato sauce in the tray
  18. Add the first layer of aubergines
  19. Cover this layer with some tomato sauce
  20. Cover this layer with mozzarella slices
  21. Add a new aubergines layer
  22. Add mozzarella slices
  23. Add the remaining tomato sauce
  24. Add some grated parmesan
  25. Put the tray in the oven, fan assisted, at 200Β° for 40 minutes

Tip: you can add anything you like to your layer, my mum adds boiled eggs and ham for example πŸ™‚ it is up to you!

Chilli with quorne

I love this recipe: it is easy, tasty, colorful and spicy!

Ingredients:

  • Red pepper, 1
  • Pointed pepper, 1
  • Sweet chilli, 1
  • Chilli, 2
  • Tomato sauce, 500 ml
  • Red onion, 1
  • Salt
  • Pepper
  • Olive oil
  • Paprika
  • Chilli powder
  • Kidney beans, 1 tin
  • Minced Quorn, 300g

Recipe:

  1. De-seed and cut the peppers and chillies
  2. Warm some oil in a pan
  3. Add the vegetables
  4. Add one glass of water and let them cook for 10 minutes
  5. In the meantime peel and cut the onion finely
  6. Add the onion in the pan and let everything cook for 7 minutes
  7. Add the tomato sauce and let everything cook for 10 minutes
  8. Add the beans
  9. Add the Quorn
  10. Add the paprika, salt, pepper, chilli powder
  11. Let everything cook for 15 minutes

Farfalle al sugo

This is the easiest recipe ever, I promise.

You are just a few steps away from one of the most delicious meals of the Italian cuisine πŸ™‚ it doesn’t take long to make it and it is a great dinner idea for when you have friends coming over!

Ingredients:

  • Chopped tomatoes, one tin
  • Pasta
  • Garlic, one clove
  • Olive oil
  • Salt
  • Basil

Recipe:

  1. Cut the garlic very finely
  2. Put the oil in a pan and warm it up
  3. Add the garlic
  4. When it starts bubbling add the tomatoes
  5. Let them cook for 20 minutes, stirring often
  6. In the meantime cook the pasta
  7. Optional step: once they are cooked put them in a blender for a smooth cream
  8. Add salt as you like
  9. Add basil
  10. Mix the pasta with the tomatoes
