Focaccine with potatoes and herbs
Focaccia is a flat bread, similar to pizza, very appreciated in Italy but unfortunately not Very popular in the UK. Let’s fix this!
Ingredients for 15 focaccine:
- Flour, 250g
- Olive oil, 2 tablespoons
- Fast action yeast, 1/2 sachet
- Salt, 1 tablespoon
- Sugar, 1 teaspoon
- Warm water, 125 ml
- Potatoes, one large one
- Salt one tablespoon plus some to put on top of the focaccine
- Rosemary to put on top of the focaccine
- Black pepper to put on top of the focaccine
Recipe:
- Mix together the flour, yeast, oil, salt and sugar.
- Add water, do it slowly so that your dough is not too wet
- Leave the dough to prove for 30 minutes
- In the meantime, boil the potato
- When the potato is done turn the heat off and leave the potato to cool
- Once it has been cooled, peel and cut the potato in slices
- With a roll, make the dough flat
- Using a glass, cut your focaccine from the dough
- Put some oil in a tray
- Put the focaccine in the tray
- Add the potatoes on the focaccine
- Put some salt, pepper and rosemary on top of the focaccine
- Put the tray in a pre heated oven and let them cook for 20 minutes at 200° in a fan assisted oven
