Focaccine with potatoes and herbs

Focaccia is a flat bread, similar to pizza, very appreciated in Italy but unfortunately not Very popular in the UK. Let’s fix this!

Ingredients for 15 focaccine:

  • Flour, 250g
  • Olive oil, 2 tablespoons
  • Fast action yeast, 1/2 sachet
  • Salt, 1 tablespoon
  • Sugar, 1 teaspoon
  • Warm water, 125 ml
  • Potatoes, one large one
  • Salt one tablespoon plus some to put on top of the focaccine
  • Rosemary to put on top of the focaccine
  • Black pepper to put on top of the focaccine


  1. Mix together the flour, yeast, oil, salt and sugar.
  2. Add water, do it slowly so that your dough is not too wet
  3. Leave the dough to prove for 30 minutes
  4. In the meantime, boil the potato
  5. When the potato is done turn the heat off and leave the potato to cool
  6. Once it has been cooled, peel and cut the potato in slices
  7. With a roll, make the dough flat
  8. Using a glass, cut your focaccine from the dough
  9. Put some oil in a tray
  10. Put the focaccine in the tray
  11. Add the potatoes on the focaccine
  12. Put some salt, pepper and rosemary on top of the focaccine
  13. Put the tray in a pre heated oven and let them cook for 20 minutes at 200° in a fan assisted oven
